Tasty and Healthy - April 11, 2011


Welcome to this week's Tasty and Healthy newsletter. Such beautiful Florida Spring Time weather - and our crops like it, too!

BIG QUESTION PLEASE: A few customers have asked us about CSA's (Community Supported Agriculture). CSA's are weekly produce "basket"programs. It is where a variety of vegetables and produce become available in predetermined "baskets" each week to a group of individuals who have planned ahead of time to purchase the baskets. If this appeals to you, or you'd be interested in more information, will you please advise Joann on Saturday or by phoning 352-232-3381. Thank you!

For Gorgeous Kale or Beautiful Swiss Chard, please phone the farm. We will cut it especially for you to keep it at its freshest.


Because Greens are extremely perishable, we ask our customers to special order them if picking up at a satellite location. At the farm, we keep them in children's swimming pools of water.

Our fields are planted with three varieties of beans in preparation for the Big U-Pick in May! More details to follow in coming weeks.

will return to the Hernando County Farmers Market!  

Everyday - until 6PM Gran'ma Angie, Nana Phyllis, Joann and Rolo will man the Produce Barn. 

Monday - 9AM - 1PM We are now serving our north Brooksville customers in the Cloverleaf Farm Mobile Home Park - just off Hwy 41, across from the Hernando County School Compound and south of Croom Road in North Brooksville. Turn into Cloverleaf Farm's main entrance, on the right side by the golf driving range. 

Friday  -  7:30AM - 5PM Rolo will be at our Spring Hill Drive location next to the Chevron location. Be sure to phone the farm for any special orders!

Saturday - 10AM-3PM Joann and Rolo will be at the Hernando County Farmers Market on Hwy 19 with 40 other vendors! Enjoy live entertainment, wonderful food, browse, shop, and visit with your neighbors - it's an all 'round enjoyable time. You'll also be supporting local businesses by visiting their booths. Be sure to phone the farm for any special orders!

Sunday - 9AM-2PM Rolo will be at The Tarpon Springs Sunday Morning Farmers Market in downtown Tarpon Springs (Corner of Alt 19 and Tarpon Ave). A great Pinellas County addition to our satellite locations. Be sure to phone the farm for any special orders!

Swiss Chard Sandwich




Prepare your favorite fish, meat and/or cheeses on your sandwich.

Slice Tomatoes and Bell Pepper rounds.

Wash Swiss Chard leaves and pat dry.

Place the veggies on your sandwich and enjoy!

Try grilled sandwiches also by adding sliced onion, cheese and tomato with the swiss chard and grill as desired.

Grilled Eggplant




Cook Time: 15 minutes

Ingredients:

    1 large eggplant, sliced
    3-4 tablespoons of olive oil
    2 tablespoons of your favorite balsamic vinegar
    2 cloves fresh garlic, minced
    a dash each of fresh or dried herbs such as: thyme, basil, dill, and oregano
    salt and freshly grated black pepper as desired

Preparation:

Heat grill.
When grill is hot, slice eggplant about 1/2-inch thick.

In bowl, blend together the olive oil, balsamic vinegar, garlic, herbs, salt, and pepper.
Brush both sides of the eggplant slices with the oil and vinegar mixture.

Place eggplant on the hot preheated grill.
Grill about 15 to 20 minutes, turning once.

Stuffed Shells with Spinach and Cheese


Ingredients:

25 Jumbo Pasta Shells (partially boiled in salted water)
4-6 cups Marinara Sauce
1/2 cup Parmasean Cheese
15 ounce Ricotta Cheese
3/4 cup Mozzerella Cheese
1 bag Beasley Farm spinach (or package of frozen chopped spinach)
3 egg yokes
2 tbsp freshly chopped parsley
2 tbsp freshly chopped oregano
2 tbsp freshly chopped basil
salt and pepper to taste



Method:

Mixture fills 25 shells

In a mixing bowl mix together all ingredients except shells and maraink sauce, reserving 1/2 mozzerella for later use. 

Partially cook Pasta Shells in salted water, drain and place on paper towels or towels to dry, being careful to keep them separate so they don’t stick together.

In 10” x 14” baking dish, spoon a layer of marinara sauce on bottom.

Once dry and cool, fill shells with 1.5 tbsp cheese mixture and nestle onto the marinara sauce. 

Cover shells with remaining sauce. Sprinkle remaining mozzerella on top. Bake at 350 about 1/3 way down in oven, for 25-30 minutes until cheese is melted and casserole is bubbly.

Serve with greens, salad, cucumbers, garlic bread if desired. 

Options: be creative with the stuffing, remembering that you may put anything in the stuffing, including broccoli, bacon, left over vegetables from the last few nights’ dinners.

CRUSTLESS SPINACH TOMATO QUICHE


Ingredients:

1/2 cup asiago cheese, freshly shredded

1/2 cup mild cheddar cheese, freshly shredded

1 cup fresh spinach leaves, chopped

scant 1/4 cup of red onion, sliced thin

2 plum tomatoes, sliced thin

1 cup evaporated milk

4 large eggs

1/4 teaspoon salt

pinch cayenne

basil

Directions:

Preheat the oven to 350 degrees. Lightly grease a quiche dish or pie plate. 

Spread the asiago cheese and then the cheddar cheese on the bottom of the pie plate or quiche pan. 

Layer red onion, spinach and tomato slices over the shredded cheese. 

Sprinkle basil over the tomatoes. 

Beat the eggs, milk, salt, and cayenne pepper. Pour this egg mixture in the pie plate or quiche pan. Bake for 35-40 minutes.

8 slices; serves 4-6

(apologies: I cannot recall where we found this recipe, but it sure is yummy!)
