Yellow Squash Soup


This delicious squash soup recipe was submitted by customer Jill Yelverton (April 2012).

Perfect for freezing, Jill's wonderful soup offers a flavorful and pleasant surprises.

Note: We enjoyed the flavor so much without the evaporated milk, that we left that ingredient out. So please use your imagination to visualize the extra creaminess the evaporated milk would have provided.




Ingredients:
•             1 1/2 pounds yellow summer squash
•             2 tablespoons butter
•             1 medium onion, sliced
•             1/4 lemon, sliced, seeds removed
•             1/4 cup flour
•             6 cups chicken broth
•             1 teaspoon salt
•             1/4 teaspoon white pepper
•             3 to 4 grinds of fresh nutmeg or dash of ground nutmeg
•             1 cup evaporated milk


Preparation:
Wash, slice and cut squash, onions, lemon.

In a large saucepan, melt butter; gently saute onion and lemon. 

Sprinkle with flour and cook slowly, stirring, until flour is absorbed. Add chicken broth gradually, then sliced squash, salt and pepper. Simmer for 1 hour. 

Puree soup in blender or food processor. Add nutmeg. 
NOTE: for safety reasons, pour until blender is 1/3 to 1/2 full, and keep your hand on the top of the lid, because hot liquid responds differently to blending than cooler foods.
To heat, stir in evaporated milk with a wire whisk and cook over low heat. Do not allow to boil. Garnish cream of squash soup with reserved squash slices.


Squash soup serves 8.

Recently Joann was able to capture the illusive Rolo on film during a morning in the eight-ball zucchini field. 


Joann and Rolo take pleasure in working the fields together, as the time passes more enjoyably.  When Rolo is manning one of the satellite locations, Joann is busy in the fields. Their work is never done, and many a day ends long, LONG after the sun goes down.






A very warm Spring has ended our winter harvests. We're currently harvesting pesticide-free eight-ball zucchini and yellow summer squash. 


The eight-ball squash is one of our coveted specialties, and we hope you enjoy it while it is in season. (recipes below)


Please phone ahead if you are interested in canning tomatoes. We will purchase your produce when the prices are best.








Roasting vegetables is a great way of introducing flavorful sides to your meals, and colorful toppers for sandwiches and hamburgers. Click here for more information about roasting (or baking) your veggies.

Fried Eight-ball Zucchini Rounds


We're showing a very simple, inexpensive recipe. However, many people prefer using bread crumbs or Panko crumbs instead of flour for a crispier texture. 

Another technique dips zucchini into corn starch, then eggs, and finally the bread crumbs.

Whatever the method chosen, fried zucchini tastes delicious.

Ingredients:

2 eggs
2 cups flour
Canola Oil
Salt
Pepper
Cumin (if desired)

Method:

Slice Zucchini 1/4” - 1/2” thickness, as desired.

Beat 2 eggs in bowl. Add herbs if desired.
Place favorite seasonings in flour and mix.
Dip zucchini saucers into egg and then into seasoned flour.


Fry dipped pieces until brown on both sides. Drain on paper towels.

Sprinkle with salt (if desired) and freshly cracked pepper.


Eight-ball Zucchini Lasagna


Do you have family members who must avoid flour, wheat, or pasta? 

I prefer vegetables to pasta, so Jack came up with this recipe for me. 

It was delicious and not watery at all!



Ingredients:

6 Eight-ball zucchini (or regular zucchini)
favorite spaghetti or marinara sauce
Ricotta Cheese
Mozzarella Cheese, shredded
Parmesan Cheese, grated
salt and pepper to taste
fresh oregano (less if dry oregano is used)

Method:
Slice 6 medium sized 8-ball zucchinis into 1/4” saucers
or
Slice 6 medium regular zucchini into 1/4” saucers or lengths, depending on personal preference

Steam zucchini about 15 minutes, pat dry on paper towels, and set aside.

In baking dish, begin layering ingredients:
spread a little sauce on bottom
layer zucchini
dollops of Ricotta Cheese (to taste)
sprinkle on oregano to taste
Mozzarella Cheese
sauce
and repeat process until last layer:
sauce, topped with Parmesan Cheese


Bake 350 for about 30 minutes or until thoroughly warm and cheese is melted.

Tasty and Healthy - April 12, 2012


Hello! and welcome to this week's newsletter! 


Spring Plants are maturing much more quickly than anticipated due to the unusual weather, but it also means our winter vegetables are just about done. Some had a very short season due to the hot temperatures. We're currently harvesting pesticide-free eight-ball zucchini. This versatile squash is one of our coveted specialties. Next week, the yellow squash should begin coming in!



Have you planted an herb garden? Lots of lush bunches cut fresh from the garden will bring those wonderful aromas to your kitchen  throughout the summer and autumn months. Joann and Rolo pick up a nice assortment of potted herbs each week from the Farmers Market.



Basil and Caladiums
Herbs are fantastic container growers. They are fast growers and quickly fill whatever size pot they may sprawl in. Herbs give off rich aromas, and complement one another with their textures and colors. Even more, herbs can help out in the garden, as well. Just click here to learn more about how helpful herbs are, and how to grow them in Florida heat.


Pesticide-free Spinach is trickling in (at this time, you might want to phone to reserve it). We also have a very small field of Flat Leaf Kale. Reservations are suggested for this pesticide-free crop as well. Usually we plant only the curly leaf. We have found that the Flat Leaf wilts a little more quickly. When you get it home, please plop it in cold water. It will come back as vigorously as our other greens, ready for cooking or back in the refrigerator.
