Tasty and Healthy - July 26, 2012


Whew! Are you surviving these hot, humid days? Any type of cold fruit salads or mixtures can cool down parched throats, and provide electrolytes to our bodies, especially for children playing outside, or anyone who finds themselves outdoors during Florida's summers. I just couldn't pass up sharing this beautiful photo - it sparks the imagination for creative ideas in making bite-sized fruit more appealing.



Many roads in our end of town have remained flooded from heavy downpours since Tropical Storm Debby. The clay-rich fields at Beasley Farm are still extremely soggy. This means a few of our summer crops are not maturing in the way we had hoped. Still, we keep our fingers crossed that our pesticide-free harvest will come to fruition soon. In the meantime, welcome to this week's newsletter! We hope your summer has been enjoyable, healthy and safe. 



Pesticide-free Okra is still slowly trickling in. Later in the newsletter, we are sharing a few ideas for using Okra and traditional Southern field peas in meal planning.

Conk Peas - Traditional side dish


Ingredients:
    * 1 bag Beasley Farm Conk peas, rinsed and sorted
    * 2 strips of bacon, cooked and crumbled
    * 1 small onion, chopped
    * 1 garlic clove, minced (if desired)
    * 1 tablespoon butter or margarine (or Extra Virgin Olive Oil)
    * Salt to taste


Directions:

Place peas, oil and seasoning, in enough water to cover in a pot; bring to a boil. 


Boil for 2-5 minutes to completely thaw. 



Remove from the heat; cover and let stand for 20-30 minutes. Do not drain. 


Slow cook bacon strips in fry pan until crisp. Blot dry.



Saute onion in Olive Oil (or the bacon drippings). Add to pea mixture. Return to heat; simmer, covered, for 30 minutes or until peas are soft. 


Top with crumbled bacon if desired. Yield: 4-8 servings, depending on hearty appetites.

Cucumber and Black-Eye Pea Salad


(adapted from eatingwell.com)
For a different approach to traditional southern field peas, try serving them cold. A protein-enriched, cool salad to serve with sandwiches, solo as lunch, or a side dish with dinner on those warm summer evenings, peas may be served mixed in an assortment of salads. Substitute Conks, Pink-Eye Peas, or Zipper Peas for the black-eyed peas if you prefer. Eatingwell.com offers this delicious salad for a tasty change at meal time.

Makes 6 servings, about 1 cup each
Prep and Serve: 20 minutes

EASE OF PREPARATION: Easy

3 tablespoons extra-virgin olive oil
2 tablespoons lemon juice
2 teaspoons chopped fresh oregano or 1 teaspoon dried
Freshly ground pepper to taste
4 cups peeled and diced cucumbers
2 cups black-eyed peas, cooked and cooled
2/3 cup diced red bell pepper
1/2 cup crumbled feta cheese
1/4 cup slivered red onion
2 tablespoons chopped black olives

Whisk oil, lemon juice, oregano and pepper in a large bowl until combined. Add cucumber, black-eyed peas, bell pepper, feta, onion and olives; toss to coat. Serve at room temperature or chilled.

Cucumbers make a cool, crisp and hydrating snack which contain electrolytes on hot summer days.


Our pesticide-free Okra is slowly coming in. We're slogging in our fields harvesting as much as possible these days, depending on the rains! Thanks for always brightening our days with your encouragement. Because summer is a time of grilling, parties, and easy-make-ahead sides, we've included some recipes below to take the place of plain old rolls - plus it's a way of sneaking in some veggies!


Special Interest:

Just picked! UNSHELLED Zipper Cream Peas and Black-eye Peas. Same price as previous years - $24.00 per bushel. Please phone the farm today or Friday to reserve, as we cannot leave them in the shell for long, before they require shelling and freezing. NOTE: Shelling will be done on Sunday, so don't delay!

Fried Okra

Okra - you either love it or hate it. There is seldom an in-between affection with Okra. However, I'm one of those in-betweenies. Depending how Okra is prepared, I really enjoy it. My favorite is Grilled Okra, but occasionally, we indulge in fried okra (the only way my husband will eat it). Four of our favorite versions for Fried Okra are listed below.


Okra belongs to the NightShade group of fruits/vegetables, is a great source of fiber, contains Vitamins A, C, D, E, K, B6, B12 and several other important vitamins. For a comprehensive listing of vitamins and minerals, please see our "About Okra" page.


Paula Deen of the Food Network Channel has an easy, traditional Southern Fried Okra recipe sure to please lovers of crunchy, munchie-style foods. Serve them as snacks, side dishes, hor dourves and even on pizza!


Paula's easy, two-and-a-half-minute VIDEO recipe contains five ingredients:


Okra
Buttermilk
Flour
Salt
Canola Oil


She slices the okra, lightly pours a little buttermilk, tosses the Okra in the milk, pouring out the excess. Then she lightly tosses in flour, places the okra into a prepared skillet and fries it.
