U-Pick for Green Beans Open - This week only!



October 30, 2012


Pesticide-Free Green Beans are ready for U-PICK this week only!
Beginning tomorrow morning our Pesticide-free Green Bean Fields (green beans only) will be open for U-Pick! Perfect for canning or freezing, and delicious fresh! Check out our green bean recipes here.

If you'd like to pick, our suggestion is to wear old shoes because the fields are wet in the mornings.


Green Bean Fields are open at 10AM in the morning.
While bushel baskets are available during picking, we suggest bringing a clothes basket lined with a towel or sheet, or perhaps even a sheet with a string to tie the top for transporting home... whatever containers you may have at home in order to transport them conveniently.

Our prices have remained the same for years,
but this year we have reduced the half bushel by $2.

$10 for the half bushel.
$18 for the whole bushel.
These beans are pesticide free!

After picking the beans, you're entitled to a little rest and relaxation:

Tasty and Healthy - October 25, 2012


Greetings! Happy World Pasta Day! We will share a few pasta recipes today which are freezable. As always, we hope this week's post finds you and your family doing well. It's Halloween week, so we're sending a few sweet, safety conscious Halloweenie greetings your way.

Presently we are harvesting our pesticide-free Yellow Summer Squash! We've been in the fields harvesting way before we anticipated! 



Featured Vegetable - Zucchini Squash

Do you enjoy Zucchini Squash?
Low in Saturated Fat and Sodium, Zucchini is a good source of Thiamin, Niacin and Pantothenic Acid, and a very good source of Dietary Fiber, Protein, Vitamin A, Vitamin C, Vitamin B6, Folate, Iron, Magnesium, Phosphorus, Potassium, Zinc, Copper and Manganese.


Zucchini may be eaten boiled, sautéed, raw, grilled, fried, baked, and stir-fried. It can be shredded for baked goods (remove the seeds) and used in salads, sandwiches and casseroles. For more information, please visit our web page here.




Currently planted on the farm, but not yet ready for harvest:


  • Eight-ball Zucchini (our speciality)
  • Yellow Zucchini
  • Turnips
  • Green Beans
  • Pole Beans
  • Yellow Beans
  • Red and White Swiss Chard (another specialty)
  • Kale
  • Broccoli
  • Mustard Greens
  • 5,000 collard plants! (biggest seller)


It will be 60-90 days before these are ready for harvest.
The Kale and Swiss Chard require replanting due to the amount of rain.


If interested in SHELLED black-eye peas please phone the farm to place an order. Peas are in our standard two pound bag. $8 per bag.

Zucchini - Nutrition

Low in Saturated Fat and Sodium, Zucchini is a good source of Thiamin, Niacin and Pantothenic Acid, and a very good source of Dietary Fiber, Protein, Vitamin A, Vitamin C, Vitamin B6, Folate, Iron, Magnesium, Phosphorus, Potassium, Zinc, Copper and Manganese.

Per serving, Zucchini contains 17mg of Omega-3 fatty acids and 10mg of Omega-6 fatty acids.

Taco Style Enchiladas


Spicy food is enjoyable and healthy, especially when using fresh ingredients like Jalapeno Peppers and Poblano Peppers. Low fat, pepper-full meals are healthy for the liver and intestines! Instead of traditional tacos, we created taco-style enchiladas for a delicious change. This is a freezable recipe. Just pull from freezer and bake until warm enough to serve.

Our simple recipe for Enchilada Sauce is found here


Ingredients:

1 1/2 lbs lean ground beef
2 Poblano peppers, chopped
2 Jalapeno Peppers, diced (remove seeds if your family does not care for “heat”)
1 large Onion, chopped
1/2 cup Water
1 1/2 cup Refried Beans
1-2 Tomatoes, chopped
1 cup chopped or sliced black olives
1 cup grated cheese (optional)
Greek Yogurt or Sour Cream
Flour Tortillas

Season according to your family’s preference:
Salt
Pepper
Chili Pepper
Cumin
Oregano
Red Pepper
Paprika
Garlic
A pinch of sugar
A pinch of cinnamon

(NOTE: If it is easier, use Publix brand Taco flavoring mix. It does not contain MSG or nitrates. Add half a packet, taste, and decide if you want to add the rest of the packet)


Method:

1. Brown ground beef with peppers and onions. After meat is cooked, drain any fat residue, add seasoning and water, and allow to simmer 15 - 60 minutes, depending on desired consistency, and how much time you have. 

2. Warm tortillas in microwave on a paper towel for 15 seconds to make them pliable. 

3. Line baking pan with a layer of enchilada sauce. Lay tortilla flat, and add layers of refried beans, meat, sauce (optional cheese, bacon and other veggies). Try to place the layers more on one edge of the tortilla than the other. Roll the tortillas, close, and place with seam-side down on the sauce. 


4. Fill pan with rolled tortillas touching. Add more sauce and optional cheeses.

5. Bake at 350 for approximately 15 minutes, to melt optional cheese, soften the tortilla, and marry the flavors.

6. Garnish with scallions, olives, lettuce, tomato, more sauce and sour cream or plain Greek yogurt. Remaining sauce may be place in gravy boat so everyone can add more if they like.


Easy Enchilada Sauce

We enjoy this Enchilada Sauce so much that it is also used on some of our egg recipes and left-overs.

Ingredients
 3 tablespoons vegetable oil
 1 tablespoon flour
 1/4 cup chili powder
 2 cups chicken stock
 10 ounces tomato paste
 1 teaspoon dried oregano
 1 teaspoon ground cumin
 1/2 teaspoon salt

Directions
In a medium saucepan heat oil, add flour, smoothing and stirring with a wooden spoon. Cook for 1 minute. Add chili powder and cook for 30 seconds. Add stock, tomato paste, oregano, and cumin. Stir to combine. Bring to a boil, reduce heat to low and cook for 15 minutes. The sauce will thicken and smooth out. Adjust the seasonings. Serve atop your favorite enchiladas.

Time flies and sometimes, when conditions are absolutely perfect, certain plants surprise us by growing quickly. Good News! Such is the case with our pesticide-free Yellow Summer Squash! We've been in the fields harvesting way before we anticipated! We've included 3 recipes below - two of them are freezable!

Yellow Summer Squash - Nutrition


Do you enjoy Yellow Squash?

One of our year 'round favorites -- Beautiful, Tender Yellow Summer Squash! Fixed as a side dish medley, eaten raw as finger food or in salads, or baked in a cozy casserole for cooler weather, yellow squash is low calorie and contains trace minerals and vitamins.
