Tasty and Healthy - October 18, 2012

Greetings! Happy National Chocolate Cupcake Day! We hope this week's post finds you and your family doing well.

Time flies and sometimes, when conditions are absolutely perfect, certain plants surprise us by growing quickly. Good News! Such is the case with our pesticide-free Yellow Summer Squash! We've been in the fields harvesting way before we anticipated! We've included 3 recipes below - two of them are freezable!

Does your family enjoy chicken? Check out this flavorful, yummy looking sandwich - we hope to try the recipe out soon.

Featured Vegetable - Yellow Summer Squash

Do you enjoy Yellow Summer Squash?
Low in Saturated Fat and Sodium, Yellow Summer Squash is a good source of Thiamin, Niacin and Pantothenic Acid, and a very good source of Dietary Fiber, Protein, Vitamin A, Vitamin C, Vitamin B6, Folate, Iron, Magnesium, Phosphorus, Potassium, Zinc, Copper and Manganese.

Squash may be eaten boiled, sautéed, raw, grilled, fried, baked, and stir-fried. It can be shredded for baked goods (remove the seeds) and used in salads, sandwiches and casseroles. For more information, please visit our web page here.

Happy Birthday, Joann Beasley!
October 22

Currently planted on the farm, but not yet ready for harvest:

  • Eight-ball Zucchini (our speciality)
  • Yellow Zucchini
  • Turnips
  • Green Beans
  • Pole Beans
  • Yellow Beans
  • Red and White Swiss Chard (another specialty)
  • Kale
  • Broccoli
  • Mustard Greens
  • 5,000 collard plants! (biggest seller)

It will be 60-90 days before these are ready for harvest.
The Kale and Swiss Chard require replanting due to the amount of rain.

Last week for Pesticide-free Okra being harvested on the farm. Try it in casseroles, soups, fried, baked, roasted and grilled (Recipes on the right).

If interested in SHELLED black-eye peas please phone the farm to place an order. Peas are in our standard two pound bag. $8 per bag.

As always, please feel free to phone the farm for special requests or special orders. We'll do everything we can to accommodate you. If you need something from the Farmers Market in Plant City, it is best to phone by Wednesday afternoon.
The Florida Department of Agriculture and Consumer Services visits to our farm regularly to test our soil and plants. For more information about our farming techniques, and the testing we undergo, please click here

Quote for this week:

There are times when it is hard to believe
in the future, when we are temporarily just
not brave enough. When this happens,
concentrate on the present. Cultivate
happiness until courage returns. Look forward
to the beauty of the next moment, the next hour,
the promise of a good meal, sleep, a book,
a movie, the likelihood that tonight the
stars will shine and tomorrow the sun will
shine. Sink roots into the present until
the strength grows to think about tomorrow.
~ Ardis Whitman
