Freezing Greens

Taking advantage of Beasley's pesticide-free Greens while they are in season by freezing them for summer use is one of the perks we enjoy living in rural Florida. Some Beasley varieties:


Beet Tops
Collards
Kale
Mustard Greens
White Swiss Chard
Rhubarb Swiss Chard
Spinach


Not all varieties are available at the same time, but Joann and Rolo work hard to have these wonderful leafy veggies arrive at our tables in a timely manner, with a little cooperation from Mother Nature.

Here is one more person's take on freezing Chard. These tips are great for any of the greens sold on the farm.


Also available at the farm are Joann's Bargain Boxes. These are flats of vegetables which need some tender loving hands to cut the bad pieces out of them, and place them into the freezer, or in the canner.


Common items include tomatoes, bell peppers, and onions. 


Peppers and onions may be sliced, chopped or diced and placed directly into freezer baggies, squishing as much air out as possible. For information regarding the flats, just phone the farm. They are very reasonably priced.
