Tasty and Healthy - November 29, 2012

Greetings! We hope your Thanksgiving celebrations were enjoyable, relaxing, and full of thankfulness!

With unseasonably cool temperatures, our bean and squash crop has stopped producing. However, the Greens and other Winter Crops are thriving. 

To see what we are growing, and what is being harvested, please see the highlighted areas below. 


Now that the holiday season is upon us, it's nice to enjoy easily "rustled up" meals. Prepare sauces, chilis, stews, and soups in large quantities. Freeze some for future meals, or refrigerate leftovers to use 3 or 4 nights into the future. Use all the fresh vegetables in your produce drawer, and even the opened bags of frozen veggies which were not completely used at a previous meal. 

Another time saver: 

Place seasonings and meat in the crock pot for slow cooking all day. Prepare vegetables like carrots, sweet potatoes, bell peppers, zucchini, eggplant, or regular potatoes into bite sizes or shaped like french fries. Place in sealed baggie. For dinner, turn the oven to 400F, line cookie sheet with parchment paper, and roast the veggies for 30 minutes (give or take). In this way, you have time to kick of your shoes, set the table, get the meat out of the crock pot, and the veggies will be ready just in time. This insures that the vegetables are not overcooked, and that they retain their nutrients and flavor.

Monday - 9AM - 2PM We will now be serving our north Brooksville customers in the Cloverleaf Farm Mobile Home Park - just off Hwy 41, across from the Hernando County School Compound and south of Croom Road in North Brooksville. Turn into Cloverleaf Farm's main entrance, on the right side by the golf driving range. 

Friday  -  7:30AM - 5PM Rolo will be at our Spring Hill Drive location next to the Chevron location. Be sure to phone the farm for any special orders! 

Saturday - 10AM-3PM Joann and Rolo will be at the Hernando County Farmers Market on Hwy 19 with 40 other vendors! Come and browse, shop, and visit with your neighbors - it's an all 'round enjoyable time. You'll also be supporting local businesses by visiting their booths. Be sure to phone the farm for any special orders!

Sunday - 9AM-2PM Rolo will be at The Tarpon Sunday Morning Farmers Market in downtown Tarpon Springs (7 Pinellas Avenue, South Corner of Alt 19 and Tarpon Ave) Their phone is 727-485-4920.

Thanksgiving Week - Change in Schedule






























Happy Thanksgiving to one and all!

Some last minute changes:
This week Rolo will be at his Spring Hill Drive location tomorrow (Tuesday).
Rolo will man the Farm on Thursday, so they will be open on Thanksgiving Day.
The lovely Mustard Greens and Turnips will be available to you, as well.
Rolo will not be at Spring Hill Drive on Friday,
but Joann and Rolo will be at the Hernando County Farmers Market 
on Highway 19 on Saturday.

Chicken with Mustard Cream Sauce and Squash


Today’s recipe is adapted from Ree Drummond’s recipe on Tasty Kitchen’s website. For the original recipe, just click here.

Prep Time: about 15 Minutes

Cook Time: about 20 Minutes

Difficulty: Easy

Servings: 8

NOTE: we halved and altered the recipe according to the items in our pantry - it was great!




Ingredients:

4 whole Boneless, Skinless Chicken Breasts
2 Tablespoons Olive Oil
2 Tablespoons Butter
3 whole Garlic Cloves, Minced
3 Tablespoons Grainy Mustard (if your family prefers less mustard flavor, decrease the amount)

¼ cups (to 1/2) Heavy Cream
¼ cups (to 1/2) Chicken Broth
Salt And Pepper, to taste
Add or decrease liquids according to your preference

Several washed yellow summer squash, cut into bite size pieces
One large white onion, cut
1 Tablespoon Olive Oil
Salt, Pepper, Cayenne Pepper to taste


Method:

Cut the chicken breasts in half lengthwise so that you have eight smaller, thinner chicken cutlets. Salt and pepper both sides.

Heat oil and butter in a large skillet over medium-high heat. 

Cook cutlets on both sides until nice and golden brown and cooked through. 

Remove chicken from the skillet and keep on a plate.

Reduce the heat to medium. Add the garlic to the pan and saute it for a minute, stirring to make sure it won’t burn. 

Add mustard and stir to combine, then pour in the cream. Stir in chicken broth, adding more if the sauce seems too thick. Taste sauce and adjust whatever you think it needs. 

Add chicken breasts back to the pan, nestling them into the sauce. 

Allow sauce to cook for another few minutes, making sure nothing sticks to the bottom.




Add squash and onions to separate fry pan and sauté to taste.

Tasty and Healthy - November 15, 2012




Greetings! Happy "National Bundt Pan Day"! May today find you and your loved ones doing well.  To the left is a photo of our Mustard Greens field. We also want to take this opportunity to wish you an "early" Happy Thanksgiving. We hope for safe traveling to you and your loved ones, and a very enjoyable time for all.


Only 7 more days 'til Thanksgiving!
We are excited to announce that our Mustard Greens and Turnips are now being harvested in time for Thanksgiving. Mmmmm.

Presently we are harvesting our Yellow Summer Squash, White Radish, Mustard Greens, Turnips and Zucchini - all pesticide-free. 

Currently planted on the farm, but not yet ready for harvest:

  • Eight-ball Zucchini (our speciality)
  • Yellow Zucchini
  • Pole Beans
  • Yellow Beans
  • Red and White Swiss Chard (another specialty)
  • Kale
  • Broccoli
  • 5,000 collard plants! (biggest seller)

It will be another 10-40 days before most of these are ready for harvest.
The Kale and Swiss Chard required replanting due to the amount of rain in October. We'll keep you posted when they are ready.
